Introducing the jicama tortilla, made completely out of the white, crunchy tuber you're probably most familiar with in its crunchy, veggie platter-ready form. From the jicama-focused brand Xica, these tortillas are 100-percent grain-free, and the nutrition facts are almost astounding: eight calories and just under two grams of carbs per tortilla. That'll make for the healthiest taco we've ever had. Just to compare, a corn tortilla has about 40 calories and 12 grams of carbs, according to the USDA; a flour version has 110 calories and 20 grams of carbs.

Jicama, also known as the Mexican yam bean, also has a handful of other nutritional benefits that regular tortillas just can't offer. It contains minerals like calcium, magnesium, and iron to help promote bone health. It's also high in digestion-aiding fiber and full of vitamin C.
We're already planning our full, Xica-fueled meal, starting things off with the brand's jicama chips (53 calories and 12 grams of carbs per cup!) and guacamole, then moving into delicious healthy, low-carb fish or tempeh tacos with the jicama tortillas. Sold? Us, too - although, for now, Xica is only available in Southern California Whole Foods and H-E-B grocery stores in Texas. Keep an eye out at your local store, though; as the brand gets more popular, these low-carb tortillas may well be coming to your area next.
